
Tortelli Reggiolesi De.C.O.
Within the culinary landscape of Emilia, pumpkin tortelli represent one of the most authentic and varied expressions of the local gastronomic tradition.
Even within the same region, however, this speciality takes on different forms and interpretations, reflecting a culinary diversity deeply rooted in the local communities.
This is certainly true of Reggiolo’s pumpkin tortelli, which are distinctly different from both the Reggio Emilia and Mantua versions.
Their gastronomic identity was officially recognised in December 2018 with the De.C.O. (Municipal Designation of Origin) label, on the initiative of the Confraternita della Zucca and the Pro Loco, to protect and promote a historic local recipe.
Their origins lie in the Este-Gonzaga tradition, but over time the preparation has evolved into a distinct local interpretation.
In Reggiolo, in fact, the filling does not include mostarda and is characterised by a balanced use of pumpkin, enriched by a subtle touch of amaretti, plenty of grated Parmigiano Reggiano and a light pinch of salt.
The shape also helps to define their identity: the tortello resembles the cappellaccio, but is not flattened as in other variants from the Reggio Emilia area, reflecting a specific local tradition handed down through the generations.
Served in the traditional manner with a sauce made from sautéed vegetables, Reggiolo’s pumpkin tortelli are a prime example of how traditional cuisine can evolve whilst retaining its identity, thereby becoming a recognised and shared part of cultural heritage.
