Among the most prized treasures of Reggio Emilia’s culinary tradition, Traditional Balsamic Vinegar of Reggio Emilia PDO is the result of a patient art that defies the passage of time.
It is made exclusively from the cooked must of local grapes and matures slowly in the vinegar cellars, stored in rows of small barrels made from different types of wood and of decreasing size.
Here, through annual decanting and skilful topping up, the product evolves for at least twelve years, becoming enriched with fragrances, aromas and complexity.

The result is a condiment unique in the world: thick, glossy, deep brown in colour, with a rich and persistent aromatic bouquet and a perfect balance between sweetness and acidity.
Every drop encapsulates the knowledge handed down from generation to generation and the most authentic identity of the Reggio Emilia region.

A heritage of history and culture

The history of Traditional Balsamic Vinegar of Reggio Emilia has its roots in the Middle Ages. As early as the 12th century, the monk Donizone mentioned a ‘preciosolaudatum acetum’ from Canossa, intended as a gift for the Emperor. From the Renaissance onwards, the art of vinegar-making became a tradition amongst the noble and bourgeois families of the region, evolving over time into one of the most refined expressions of Emilia’s food and wine culture.
Recognised with the Protected Designation of Origin (PDO) status, it is today a symbol of excellence, appreciated and sought after throughout the world.

How to enjoy it

Traditional Balsamic Vinegar of Reggio Emilia PDO is a precious product, to be used sparingly to bring out its qualities to the full.
Just a few drops are enough to enhance shavings of Parmigiano Reggiano, boiled meats, vegetables and salads. It also surprises in the most creative pairings, with strawberries, ice cream, zabaglione or simply enjoyed on its own, as a true elixir of flavour.

A recognisable elegance

It is sold in the characteristic 100 ml bottle, with its unmistakable shape resembling an upside-down tulip, sealed with the Consortium’s logo.
The lobster-red, silver and gold labels identify the different quality grades, guaranteeing authenticity and provenance to the consumer.
