In Reggio Emilia, Zuppa Inglese is much more than just a dessert.
It is the dessert for special occasions, one that evokes family memories, lavishly laid tables and shared moments.
Every spoonful tells the story of a tradition handed down through the ages, made up of simple gestures, wholesome ingredients and a passion for good food.
Its origins date back at least to the 19th century, when it was prepared with sponge cake soaked in aromatic liqueurs, such as Alchermes and Rosolio, layered with soft layers of custard.
Over time, the recipe has evolved, taking on distinctive characteristics in the Reggio Emilia area that still make it one of the most representative specialities of the local cuisine today.
The special connection with Savoiardi biscuits from Reggio Emilia
One of the distinctive features of the Reggio Emilia version of Zuppa Inglese is the use of the famous Savoiardi biscuits from Reggio Emilia, soft and light biscuits first created in the city itself at the start of the 20th century.
Thanks to their texture, they absorb the liqueurs and creams perfectly whilst retaining their structure and softness, helping to create that balance of textures that makes this dessert so highly prized.
The combination of Savoiardi biscuits and custard creates an elegant, flavourful dessert, deeply rooted in the region’s culinary history.
A dessert of layers and contrasts
The traditional recipe is based on alternating simple yet perfectly harmonised ingredients.
The ladyfingers are dipped in Alchermes or other dessert liqueurs and arranged in layers with a delicate custard flavoured with lemon zest and vanilla.
What makes the dessert even more indulgent is the addition of chocolate cream, created by enriching part of the custard with dark chocolate.
The result is a delightful contrast between the freshness of the light-coloured custard and the more intense, enveloping notes of cocoa.
After resting in the fridge – which is necessary to allow all the flavours to blend perfectly – the Zuppa Inglese achieves its ideal texture: soft, velvety and full of aroma.
