In the heart of Reggio Emilia, there is a scent that belongs to home kitchens, village ovens and the hands that knead the dough using time-honoured techniques: it is the scent of Erbazzone, the savoury pie that symbolises Reggio Emilia’s culinary tradition.
Originating in peasant cuisine and passed down from generation to generation, its recipe has its roots in the domestic traditions of the Reggio Emilia countryside, where simple, wholesome ingredients were brought to life with creativity and skill.

This designation promotes not only the product itself, but also the cultural and gastronomic heritage of Reggio Emilia.
Alongside the most common recipe, the region preserves interesting local variations.
In Correggio, they make ‘scarpasòt’, characterised by the absence of puff pastry, whilst in the Reggio Emilia Apennines, the traditional ‘scarpasòun muntanèr’ is enriched with rice, a reminder of the ancient seasonal migrations to the rice fields of the Po Valley.
Now, Erbazzone Reggiano PGI can be enjoyed in bakeries, delicatessens and restaurants across the province, where it continues to celebrate, through authentic flavours and local ingredients, one of the most cherished traditions of Emilian cuisine.
