Spinach tortelli

Green tortelli are a regional Emilia dish and typical of the Reggio Emilia area. It is a stuffed pasta: the filling (or stuffing) is made of spinach or green chard combined with seasoning, cheese and ricotta.

The ingredients vary according to the family and local traditions. Thus the filling can also include other vegetables or herbs, such as Savoy cabbage, Catalogna Chicory, Radicchio (red-leafed chicory) or nettles. The typical Reggio Emilia recipe requires seasoning with butter and very mature Parmigiano Reggiano cheese.
Traditionally, green and pumpkin tortelli are served on Christmas Eve and on St. John's night on 24 June.
