Tortellini Fritti
Among the most beloved festive treats are Sweet Tortellini, a local specialty that delights from the very first bite.
The recipe
Ingredients
for the Pastry
- 500 g all-purpose flour
- 150 g sugar
- 50 g butter
- 1 sachet of baking powder
- 2 eggs
- 1 small glass of Sassolino liqueur
for the Pastry Cream
- 6 level tablespoons of flour
- 6 heaped tablespoons of sugar
- 6 egg yolks
- 500 ml milk
- Lemon zest or vanilla (to taste)
The preparation
Knead all the pastry ingredients together until you obtain a smooth and elastic dough.
Prepare the pastry cream by whisking the egg yolks with the sugar, then adding the flour and slowly incorporating the milk.
Cook over low heat until the cream thickens, then flavor it with vanilla or lemon zest.
Roll out the dough, add the chosen filling, and shape the tortellini using the appropriate mold.
At this stage, you can choose the most indulgent version: fry them in hot oil until golden, or bake them in the oven.
Finish with a generous dusting of powdered sugar, and they are ready to be enjoyed.
