Stepping inside a Parmigiano Reggiano cheese dairy means witnessing a ritual that has been repeated every day for centuries. In the province of Reggio Emilia, fresh milk is slowly transformed into one of the world’s most prized cheeses, thanks to the skilled hands of the cheesemakers.
The tour offers a close-up view of the various stages of production: from the processing of the milk in large copper vats to the formation of the cheese wheels, via the curdling stage and the traditional ‘spinatura’ (pressing).
This process takes place in the early hours of the morning, when the dairy is in full swing, and every step reflects an ancient tradition, characterised by precision, experience and respect for the raw material.
At the end of the tour, in dairies with on-site shops, you can sample Parmigiano Reggiano at various stages of maturation and purchase it directly on the premises, taking home with you the flavour of a unique region.
