Pumpkin tortelli
Pumpkin tortelli are the Po valley's iconic dish, popular, with few variations, in the provinces of Mantua, Parma, Reggio Emilia, Piacenza and Cremona.
It is a pasta shell filled with boiled pumpkin, amaretto biscuits, mostarda, cheese and nutmeg.
Mostarda and nutmeg are not as widely used in the typical Reggio Emilia recipe, which uses more mature Parmigiano-Reggiano. They can be served with melted butter or sautéed onions and tomatoes. It is the traditional dish served on Christmas Eve.
