Novellara Municipal vinegar cellar
The municipal vinegar cellar is located in the attics of the Gonzaga Fortress, a municipal residence in the heart of the old town centre of Novellara.

The vinegar cellar was created with two batteries of prized barrels, stamped with the arms of the Municipality of Novellara and of the Fraternity; the batteries are composed of six barrels of different woods (oak, chestnut, cherry, mulberry). In these barrels rests the cooked must that time, and the care of dedicated custodians of the discipline of production of traditional balsamic viengar of Reggio Emilia, will transform into that prestigious product that has its cradle and its history in this little strip of earth.
The vinegar produced in the Fortress of the Gonzaga is at the disposal of the Municipality for institutional purposes; it is chosen to give a symbolic gift to the couples who celebrate their wedding in the Town Hall.
The vinegar cellar is open to the public on the first Sunday of every month (except August), with the opening of the Gonzaga Museum and the antiques market. It is possible to visit the vinegar factory at the following times: from 10.00 a.m. to 12.00 and from 4.00 to 6.00 p.m.; for other opening times, upon agreements and on the occasion of local events.
